Pancake Muffins

Ok everyone, confession: I’m terrible at making pancakes…they never come out right. It’s like the only food I can’t make (so far…) This recipe doesn’t require any skills! And each pancake muffin can be individualized for the people you’re serving! This is another pinterest image that I found with no link so I had to do improvisation.
So, here goes! You start with a basic pancake recipe:

1 egg
1 cup all-purpose flour
3/4 cup milk
1 tbsp sugar
2 tbsp Veg oil
3 tsp baking powder
1/2 tsp salt

Beat the egg until fluffy. Slowly beat in other ingredients until just mixed.

Now the fun part! Take a mini muffin pan (greased) and place you specialty ingredients (bacon, sausage, fruit, chocolate chips, etc.) into each cup. Pour batter into each cup and bake at 350 for 12-14 minutes. Remove from oven and let cool about 5 minutes. These pop out easily with a simple swoop around with a butter knife and gently lifted 🙂 You can serve it with syrup or without! Enjoy!

Easy Eggs

So I found a picture on pinterest of eggs cooked in a muffin pan. Though when I clicked on it there was no link to go to with instructions so I figured it out on my own 🙂 This is a great way to make breakfast fun for kids who would love to help out! My daughter (who rarely eats breakfast) ate two of these because they were different from what she was use to. Here’s what I did:


Eggs (one egg per muffin cup)

Cheese (any time you prefer, I used shredded cheddar and feta)

Cilantro (or whatever seasoning you see fit)

other possible add-ins which I didn’t have on hand at the time:

Bacon, diced bell peppers, mushrooms, olives, pemintos, etc


Preheat oven to 350ºF. Spray muffin cups with cooking spray to prevent sticking.

Crack one eggs into each muffin cup.

Top with cheese, seasoning and other desired ingredients (I GENTLY mixed it so I wouldn’t bust the yolk). Place in oven and bake for about 15-20 minutes or until desired doneness.

Let cool about 5 minutes, this will make it easier to remove from the pan. I used a fork (or a butter knife) to separate the sides and then slid it right out. Enjoy!!

Fall Snack Mix

I found this mix on Pinterest and it is just delicious! Again, I have altered it a little bit because it didn’t quite turn out like I expected it would the first time. I’ll post the original recipe, then my altered version.

4 cups Golden Grahams® cereal
2 cups Cocoa Puffs® cereal
2 cups thin pretzel sticks (2 1/4 inch)
1 cup candy-coated peanut butter candies
1 cup dry-roasted peanuts
10 oz white chocolate baking bars or squares, chopped
2 tablespoons butter or margarine
1/2 cup powdered sugar


In large bowl, mix cereals, pretzels, peanut butter candies and peanuts; set aside.

In 1-quart microwavable bowl, microwave white chocolate and butter uncovered on High about 1 minute, stirring once, until melted and chocolate can be stirred smooth. Pour over cereal mixture, stirring until evenly coated.

In large resealable food-storage plastic bag, toss half of the cereal mixture with 1/4 cup of the powdered sugar until evenly coated. Spread on waxed paper to cool. Repeat with remaining cereal mixture and remaining 1/4 cup powdered sugar. Store tightly covered at room temperature.

When I made my first batch, the white chocolate didn’t melt well. It was clumpy and didn’t mix smoothly with the rest of the mix so I changed it a bit on my second batch:

4 cups Golden Grahams® cereal
2 cups Cocoa Puffs® cereal
2 cups thin pretzel sticks (2 1/4 inch)
1 cup candy-coated peanut butter candies
1 cup dry-roasted peanuts
2 tablespoons butter or margarine
1/2 cup powdered sugar

Mix Golden Graham, Cocoa Puffs, pretzels sticks, and peanuts. Slicing butter thinly, place on top of the mix. Microwave in 30-second increments, stirring in-between, for about 1 1/2 minutes to evenly coat the mix in butter. Place 1/4 cup powered sugar in resealable bag and toss in half the mix and half the peanut butter candies. Toss to coat. Repeat with the other 1/4 cup powdered sugar, rest of the mix and other half of candies. Lay on wax paper to cool. Store tightly covered, room temp.

And most importantly, enjoy!

Homemade Pizza! (Bread Machine Recipe)

This dough is fantastic! The dough is made with a bread maker, but I bet it can be done without!

1 cup water
1 tsp salt
1 tbsp butter
3 cups bread flour (I used all-purpose flour)
2 tsp yeast

Place ingredients in order in the bread machine. Start dough cycle. At the end of the dough cycle remove dough from the bread maker. Place on floured counter and let rest for 10 minutes (the last one I made I actually left it to rest for a lot longer than 10 minutes, maybe 30-45, and it seemed to bulk up during that time which helped to make a better crust around the edges). Shape into a 15-16 inch round pizza pan.

Add your topping (sauce, cheese, pepperoni, etc). Bake at 475°F for 20 minutes or until done.

Ok, my pan was only about 14 inches which made the crust a little thicker but was great. My husband said it was better than any store-bought or ordered pizza!

This recipe came from the instruction manual for my Hamilton Beach Bread Machine.

Fresh Salsa

Fast, Fresh, Easy, and Delicious! (good for you too)


4 large ripe tomatoes, chopped
1 red onion, chopped
1 jalapeno, minced
1/4 Cup Cilantro, chopped
3 garlic cloves, minced
Juice of 1 lime
1/4 cup olive oil
1/2 teaspoon salt
In a mixing bowl, combine all ingredients together. Toss thoroughly. Let stand 15 minutes before serving.

Spicy Garlic Refrigerator Pickles

I also made these easy pickles today. http://thesavoryspoonful.com/?p=651  Will post in a couple days how the taste, but I’m  guessing from the look and smell they are going to be EXCELLENT!

On a side note, I am a much better cook, than photographer or pickle packer…haha.


3-4 Pickling Cucumbers sliced in half or quartered
5 Fresh Dill Sprigs
3-4 Clove Garlic crushed
1/2 Cup Distilled White Vinegar
1 1/4 Cup Water
1 Tbs Salt
1/2 Tsp Sugar
1/2 Tsp Dill Seed
1/2 Tsp Mustard Seed
1/2 Tsp Coriander Seed
1/2 Tsp Hot Pepper Flakes
1/2 Tsp Celery Seed
1 Tsp Peppercorns
1 Quart Canning Jar

Mix water, vinegar, salt and sugar together in a pourable container until salt and sugar are dissolved. Arrange Dill sprigs and cucumbers in 1 quart canning jar, then drop in garlic cloves, sprinkle spices into jar, add liquid the water and vinegar mixture until jar is filled to rim. Put the lid on the jar and give it all a good shake. Refrigerate. Give it a taste test after 24 hours. If there are any left after 48 hours give them another taste, they will continue to pickle as they lay in waiting in the frig.


These pickles should be safe in the refrigerator for up to a month. If you  dont eat them all in the first day!

Fresh Cherry Turnovers


I bought a bunch of cherries last week because they looked so good and they were a great price. I totally forgot they were in the fridge, until today. I decided I better do something with them and fast! I decided to try this cherry turnover recipe http://www.recipegirl.com/2007/06/08/fresh-cherry-turnovers/ Wow! This recipe is definitely a keeper! It takes some time, but it is so worth it!



Yield: 9 turnovers ( i got 8)

Prep Time: 40 min + chilling time

Cook Time: 25 min


1 1/2 cups all-purpose flour
1 teaspoon granulated white sugar
pinch of salt
1/2 cup (1 stick) cold, unsalted butter, cut into 1/2-inch pieces
1 (8 ounce) package of cold cream cheese, roughly cut into tablespoons

2 1/2 cups pitted & halved fresh cherries (about 3/4 pound)
2 Tablespoons granulated white sugar
1 Tablespoon finely grated lemon zest
1 Tablespoon fresh lemon juice
1 Tablespoon cornstarch
1/4 teaspoon salt

1 large egg yolk
2 Tablespoons milk or cream

coarse grain sugar


1. Prepare crust: Place the flour, sugar and salt in the bowl of a food processor and process for 10 seconds to blend. Add the cold butter pieces and process for just a few seconds, until the mixture looks like crumbs. Add the cream cheese and pulse quickly about 25 times (or until a clump of dough has formed). Turn the clump of dough onto waxed paper and knead gently 2 to 3 times to bring dough together. Flatten into a 7-inch square. Wrap with plastic wrap and chill for at least 30 minutes (or up to 2 days).

2. Prepare filling: Mix cherries with sugar, lemon zest & juice, cornstarch and salt; set aside until ready to fill the turnovers.

3. Place the dough on a lightly floured surface.. Roll into a square that is roughly 15×15. At this point, you can decide if you’d like to make round or square-shaped turnovers. If you make round (half-moon shape) turnovers, you can simply use the top of a 6-inch diameter bowl as your cutter. If you’d rather make square (triangle-shape) turnovers, use a chef’s knife to trim a 15-inch square. Mark 5-inch increments along all sides of the dough & with the ruler as a guide, cut the dough into nine 5-inch squares. Re-roll scraps as necessary.

4. Line two rimmed baking sheets with parchment paper or silicone baking mats.

5. Assemble Turnovers: Place cut-out dough onto prepared baking sheets. On each square or circle, use a knife to lightly mark a line showing the halfway mark (make sure it’s just a line indentation & not cut all the way through). Spoon a couple of Tablespoonfuls of the cherries onto each “half”- keeping it on one side of the dividing line and leaving about a 1/4-inch border along the edge. Brush edges on the fruit side of the turnover with egg wash (egg & milk whisked together). Carefully fold the other side over the fruit and use the tines of a fork to press the edges together and seal them. Move baking sheets to refrigerator and chill for about 20 minutes. Adjust racks in oven to top and bottom thirds of the oven, and preheat oven to 375°F.

6. Bake Turnovers: Brush the tops of the turnovers with egg wash and sprinkle with coarse sugar. Use the tip of a paring knife to carefully cut three slits in the top of each turnover to allow steam to escape during baking. Bake turnovers on bottom and top third racks for 15 minutes. Then rotate the sheets and bake for an additional 10 to 15 minutes, or until the crust is golden brown. Transfer to a cooling rack to cool completely. Serve warm or at room temperature, with whipped cream or vanilla ice cream.


*The dough may also be frozen. Wrap in plastic wrap and place in zip freezer bag for up to 2 months.
*These will keep at room temperature in a covered container for 2 days. To re-crisp, heat in a 375 degree oven until warmed through. They’ll keep a little longer if wrapped airtight and refrigerated (about 5 days).
